Zucchini, Carrot and Corn Frittata
1 large zucchini, grated
1 large carrots, grated
420g can creamed corn
1/4 cup lite milk
1/4 cup corn flour (add more flour if you prefer a denser frittata)
1/4 cup low fat cheese, grated
*You can substitute the grated veggies for leftover roasted veggies, steamed ones or add some diced mushroom and red capsicum into the mixture.
This is quite a wet frittata. Use steamed veggies or more flour for a denser texture.
