Vegetable stir-fry with rice
1 tablespoon olive oil
1 onion, sliced
1 garlic clove, crushed
2 carrots, sliced
1 stalk of celery, sliced
½ green capsicum, sliced
½ red capsicum, sliced
5 large mushrooms, finely sliced
½ green cabbage, sliced finely
Large handful of snow peas
1 tablespoon sweet chilli sauce
1 tablespoon soy sauce
You can add chicken, beef or tofu to this recipe - simply add the ingredient at the same time as the carrot and adjust the cooking time depending on the protein you choose.
