350g firm tofu
2 cloves garlic
3 Tbs finely chopped basil
2 cups wholegrain bread crumbs*
1 egg, lightly beaten
2 Tbs balsamic vinegar
1 Tbs sweet chilli sauce
1½ cups dry wholegrain bread crumbs, extra*
*You can make homemade breadcrumbs by toasting bread. Place toasted bread in food processor and blitz until fine bread crumbs. 1 slice of toast makes about 1/2 cup breadcrumbs
