Silverbeet, Beetroot and Tomato Soup
1 bunch of silver beet - washed, drained and chopped coarsely
1 fresh beetroot - washed, peeled and sliced or cut in cubes
1-2 cans of peeled and chopped tomatoes.
2-3 tablespoons tomato paste
Lemon and chilli for seasoning - you can also add maggi cubes to enhance flavour
About ½-1 cup Bulger wheat or couscous (if you like)
A handful of finely chopped parsley and/or basil (if you like - for added flavour)
1-2 small onions - sliced in long strips or finely dice
1-2 cloves garlic, crushed
1 tablespoon olive oil
