New Zealand Rice Salad

Ingredients

Salad
1 cup brown rice
1¾ water to cook rice in
¼ cup Soya sauce (salt reduced)
½ onion, chopped
3 spring onion, chopped
1 red capsicum, chopped
½ cup macadamia nuts (roasted)
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup sesame seeds
Lots of raw vegetables (mushrooms, chopped cherry tomatoes, grated carrot, sliced snow peas,
grated zucchini), steamed (frozen peas), tinned (corn, beans) or roasted veggies
(leftovers or pumpkin)


Dressing
¼ cup olive oil
2 tablespoons lemon juice
1 teaspoon lemon rind
1 teaspoon crushed garlic
1 teaspoon finely grated ginger 
1 teaspoon honey

Method

  1. Cook rice
  2. Add onion and soy sauce, stir through and leave for 2 hours or overnight
  3. Add remaining ingredients; toss through
  4. Mix dressing together and pour over rice
