Mountain Bread Nachos

Healthy recipe: homemade tortillas and guacamole

Ingredients

Nachos:
1-2 pieces Wholemeal Mountain Bread per person 
1/3 cup grated low fat cheese 

Guacamole: 
1 avocado

1 tablespoon light sour cream 
1/2 lime or lemon, juiced
fresh coriander, roughly chopped
1/4 teaspoon sweet paprika
½ clove garlic (optional)

Bean Salsa: 
125g can red kidney beans
125g can salt-reduced corn
1 medium tomato
1 red capsicum
2 teaspoons sweet chilli sauce


Method

Nachos:
  1. Preheat oven to 180°C
  2. Cut or rip bread into triangles and place onto a baking tray
  3. Bake for 5 minutes or until crisp and lightly golden
  4. Top with grated cheese
  5. Serve with guacamole and bean salsa 

Guacamole:
  1. Peel and mash avocado
  2. Add lime juice, coriander, paprika and sweet chilli sauce (optional)
  3. Mix to combine

Bean Salsa:
  1. Drain kidney bean mix and corn. Discard liquid 
  2. Dice red capsicum and tomatoes 
  3. Mix together red kidney beans, red capsicum, corn, tomatoes and sweet chilli sauce


Other Ideas

For an extra flavour hit, why not try adding a dash of sweet chilli sauce to your guacamole
For simplicity, use baked beans instead of the bean salsa
