Lemon Chicken with Chickpea Salad
1 large chicken breast (around 200g)
1 tbs zested lemon rind
400g can chickpeas, drained and rinsed
½ small red onion, sliced finely
1 large or 2 small tomatoes, roughly chopped
1 bunch of coriander, leaves finely chopped
1 medium avocado, spoon out flesh and roughly chop
1 tbs lemon juice
Leftovers make a great wrap for lunch!
