Hamburger Kebabs

Healthy recipe:meatball kebabs hamburger kebabs

Ingredients

makes 15
1 small brown onion
250g beef mince
400g can lentils, drained
1 carrot
1 cup dried breadcrumbs, preferably multi-grain
1 egg, lightly beaten
20ml (1 tablespoon) Worcestershire sauce
¼ cup salt reduced tomato sauce, plus extra to serve
1 tablespoon mixed dried herbs
1 punnet cherry tomatoes
1 yellow capsicum
1 zucchini 

Method

  1. Soak skewers in water for 20 minutes to prevent them from burning on bbq.
  2. Cut capsicum into chunks and cut zucchini into semi-circles (about 1cm think).
  3. Grate onion and carrot.
  4. In a bowl combine onion, carrot, lentils, mince, breadcrumbs, eggs, Worcestershire sauce, tomato sauce and herbs (if the mixture is too wet add extra breadcrumbs, if too dry add another egg).
  5. Roll hamburger mixture into balls.
  6. Thread hamburger mixture and vegetables onto skewers. When attaching meatballs onto skewer, tightly mould mince around the skewer.
  7. Grill kebabs for 8-10 minutes until cooked. Rotate every few minutes.

Other Ideas

Tip 
Make sure that the meat and the vegetables on the skewers are the same thickness so
they cook evenly. They should all touch the pan or grill. 

Variations
  • Instead of using bamboo skewers use rosemary spears (simply remove most of the leaves, leaving just the leaves at the top).
  • You can use other vegetables on the skewers such as red and green capsicum, mushrooms, basil leaves.
