- Cook quinoa according to packet instructions (I cook mine in the rice cooker)
- Dice pumpkin into small pieces
- Heat coconut oil in pan, add honey, pumpkin and craisons and cook until pumpkin starts to soften (about 10 minutes)
- Arrange salad by placing quinoa in bowl, adding spinch, topping with pumpkin mix and garnish with rocket
Try using sweet potato in place of pumpkin. Add any of your favourite salad ingredients. Top with some nuts or seeds.
