We just returned a 10-day holiday (yes, it was wonderful!); self-catering with no access to shops (well, not without a 3 hour one-way trip).
As you can imagine, planning was essential. We managed to eat colourful fruits and veggies the entire trip and I wanted to share with you what kept us colourful on holidays. Hopefully you’ll get some ideas that help you stay colourful in your daily life.
1. Buy different colours
Sounds obvious I know. But take a look in your trolley. Have you got a traffic light of colour? Some green fruits and veggies? Some orange and/or yellow? Red? Once you have a traffic light, turn it into a rainbow. Some brown or white, blue or purple.
I bought lots of fresh but also some frozen (peas, berries) and canned (corn and beans) so towards the end of the trip as we ran short on fresh foods we were still able to stay colourful.
2. Buy enough colours
We are 7 people. 2 fruits each day. If buying for 3 days that’s 42 pieces. If buying for a week, that's a lot!
3. Add colourful veggies to lunch
Why wait until dinner to have veggies? Enjoy leftover dinner as lunch, add colour to your sandwich or have a carrot or cucumber on the side. The kids and I often snack on a platter of cut veggies while I make their sandwiches. My difficult husband prefers veggies in his sandwich, while my kids prefer them on the side in their lunch box.
4. Snack on colours
Stick to fruits and veggies if you are feeling peckish between meals. Whole fruit or veggies, veggie sticks (pre-cut some and keep a tub in the fridge), cherry tomatoes or fruit salad. There is so much to choose from!
5. Fill half your dinner plate with veggies
Change your thinking. Instead of thinking of the meat or pasta as the main and veggies the side; think of veggies as the base and make the grains and meat the side.
