Banana and Zucchini PancakesIngredients1 egg
1 cup plain flour (or use wholemeal plain) 1 cup milk (I use reduced fat) 1 banana 1/2 zucchini dash of oil Method1. Mash banana and grate zucchini
2. Mix together eggs, milk, flour, zucchini and banana using a whisk 3. On medium heat, heat a little oil in a fry pan (you can use a pastry brush to spread oil) 4. Spoon pancake mixture into pan, about 1/4 cup at a time 5. When batter starts to bubble, flip pancake 6. Cook on other side for a few minutes until golden brown on both sides 7. Repeat with remaining mixture, adding a little oil to pan before each pancake Other IdeasMy kids eat these plain (without syrup or sugar) as the banana sweetens them
Variation; include 1/4 - 1/2 cup frozen raspberries. Do steps 1-4 as usual. After step 4 put a few frozen raspberries onto the pancake. Continue with steps 5-7 |
