- 1 brown onion diced - 2 cloves (2 tsps) crushed garlic - 1 tablespoon tomato paste (no added salt) - 500g premium mince - 10 mushrooms, diced - 1 eggplant, diced - 2 medium carrots, grated - 1 large zucchini, grated - 1 large handful kale, washed and diced - 420g tin of brown lentils, drained - 2 x 420g canned tomatoes (for a sweeter, thinner sauce use 1 can tomatoes and 1 can tomato soup) - 2 tablespoons dried herbs (Bolognese style) Method
Other IdeasSubstitute the mince with 420g canned red kidney beans (drained) for a meat-free sauce.
Recipe Re-doDay 1: serve on pasta with side salad
Day 2: make mash potatoes by steaming potatoes and sweet potatoes. Drain and mash with a little milk. Place anything sauce in oven proof dish and top with mash potatoes and a sprinkle of low fat cheese. Bake at 180 for 30 minutes Day 3: Make pancakes using 2 cups plain flour (try using half wholemeal), 2 egg and 2 cups milk. Whisk together. Heat a dash of oil in a pan on medium heat. Spoon in 1/2 cup mixture and cook pancake. Flip after 3-4 minutes or when pancake is golden. Fill pancake with anything sauce and a spinkle of light cheese. Wrap and enjoy with salad (as pictured above). |
